Introduction – Date Slice

If you have read all the articles in this web site then you deserve a reward.

This is really yummy.

2 cups chopped dates
1 teaspoon vanilla
1 cup Brown sugar
1½ cups rolled oats
1 cup water
1 1/3 cups plain flour
½ teaspoon baking powder
185 g melted butter

Date filling: in saucepan, combine dates, water and vanilla. Bring to the boil and simmer for 15 minutes until thickened and soft, cool a little.

Mix together flour, sugar, baking powder and rolled oats. With a fork, blend in the butter, stirring until crumbly. Press half of crumb mixture into a greased 20cm square tin. Spread with cooled date mixture and pat down until smooth. Bake in a moderate oven (180oC) for about 30 minutes or until golden brown. Cool and cut into squares.
